Apple Pan Dottie has been a part of my life since I was old enough to know what dessert was. It's the perfect ending for a week night meal. It's made with a minimal of ingredients, which is probably why we ate it so much when I was a kid. Anyways, it's our dessert tonight and tastes mighty fine with a cup of coffee, or if you like a scoop of vanilla ice cream.
Apple Pan Dottie.
3-4 large red apples
1 stick of butter
1 cup of all purpose flour
1 cup of sugar
1 TBSP of cinnamon
Peel and slice apples, put in pie dish then sprinkle with cinnamon and sugar and add about a 1/4 cup of water to pie dish.
In separate bowl mix butter, sugar and flour and mix with hands, until crumbly.
Then top apples with crumb mixture.
Bake at 350 degrees for 30-40 minutes.

Spring Break 08
We just got home yesterday from our spring break camping trip. It was wonderful. With weather in the 70's and clear skies, we had a blast!
Camping trips to me mean uninterrupted reading time and I just finished Respectable Sins by Jerry Bridges.
While I was reading, the girls were busy with their partners in crime finding a rope swing.
No one left without being thouroughly soaked!
We adults are much too civilized, and know the value of not causing physical disablility by rope swinging ourselves, we limited our outdoor activiity to hikes in the woods
Well rested, I came home to tackle piles of laundry and get ready for this week. The girls are back in school, but only for a few more weeks!

Easter Weekend
Did you have a great Easter weekend? I did! Here's a summary of our funtimes---
FRIDAY- My sister and her family came to town and we cooked out. We let the kids play while we sat on the front porch and rocked and talked all evening.
SATURDAY- We went to out church's Easter egg hunt at my friend Michelle's. She and her husband own 80 acres of beautiful land and it is always so much fun. The weather was gorgoeus and hunting eggs and fishing were the highlights. Saturday afternoon we went to see "Horton Hears a Who" and then Mexican food-
SUNDAY- Being the good Baptists that we are, we slept in through Sunrise Service, ( don't judge me for hating to go to sunrise service) but had such a wonderful morning worship. A quartet in our church sang Travis Cottrell's song-" In Christ Alone" love it, love it, and my pastor really had a woncderful Easter message about Hope in Christ.
The kids tried to shuck off there Easter duds as soon as we hit the door so it's a good thing we got these shots before we left for church:

The best part of the day has to be now-- Wayne is softly snoring in his recliner, my girls are watching a movie and eating Easter candy, I'm getting ready to log off here and go for a nice bike ride in the beautiful warm sunshine.. Happy days to you--

Happy Birthday
I take any reason i can to celebrate-- even if it's my own birthday.
I have never been a woman to dread another birthday. I fully embrace a day that is mine alone! I actually celebrated yesterday---
The girls at work took me to Buffington's downtown and I had a HUGE delicious chili cheese burger with cheese fries. Oh Yeah baby!--- It's been 9 long weeks of dieting and yesterday was the day of celebrating all things cheesey---
Wayne and the girls grilled out for me last night and it was wonderful. The best part-- they got me a day at the spa! I'm so excited!
In celebration of turning 39 here are the 10 things to be thankful for as I hit-
1.I have a whole year left before I'm 40.
2.I can run 8 miles-- more than alot of 39 year old women can do!
3.I'm more financially secure than I was 29-- I live in a smaller house and drive an older car :)
4.My children sleep all night.
5 I no longer have to get a babysitter for a date night.
6.I realize what a gift I have in my husband. We laugh and talk alot more and fight alot less than we did at 29.
7.I have learned to say no to things I don't really want to do to make more time for my family.
8. I am still young enough top 20 songs with my girls, but enjoy the "classics" like REO Speedwagon, John Bon Jovi and Phil Collins.
9.I realize I'll never be skinny-- and I'm OK with that.
10. God is patient and loving and invites me to join Him in His plans.

Read this book
I just finished reading "The Hiding Place" by Corrie Ten Boom. It was so good I checked out every one of her books from the Putnam County Library and cried my way through all three of them. She was quite an amazing lady. She survived the Holocaust, losing her father and sister and went on to become an ambassador for Christ. She literally went all over the world sharing God's love. She lived a simple life, turning every dime back into the mission. She was incredibly happy and thankful for her life that was sometimes tragic, and full of suffering.
I felt humbled to read about her love for Christ.

more on Ebay
I am the proud owner of a Kodak Z712 digital camera! I am so excited. I feel like I've broken through the sound barrier and joined all of you hard core bloggers with your fancy shmaansy digital cameras! I tell you, Ebay nearly wore me out. Wayne helped me devise a plan today to outbid those sneaky experienced Ebay bidders form outbidding me at the last minute. I am so excited. My blog page will now become a plethora of interesting and insightful information, accompanied by pictuers galore!
Now an update on biggest losers. If you remember Wayne and I have been virtually starving ourselves, all for good reasons- Wayne has lost 20 lbs, and is now off his BP meds. I have lost 15, and ran the Bobcat Ramble, ( a local 5K) yesterday, finishing with lightening fast speed of 26:45.
Stay tuned for new pictures of the skinny version of our former selves. Soon as I get my camera!
